7 different kinds of handmade noodles at Majiyong

Rain pours onto the roads and splatters on my apartment windows. A craving for noodles, dunked in a warm broth, is unavoidable.

Majiyong is a Lanzhou beef noodle chain situated across multiple cities in China. It was first established in 2019 and rose to popularity in a short amount of time. One of their characteristics is hand-stretched noodles, displayed through a glass panel to customers.


The chef's skills are mesmerizing. After folding and cutting the dough a few times, a thick dough ball quickly transforms into narrow, uniform strands.

Their pickled vegetable platter, with its acidic tang and mild spices, is a great appetizer. Wood-ear mushrooms, cucumbers, radishes, and cabbage are all traditional sides to noodles, and Chinese "lengcai"(cold dishes) that you have to try.

There are two types of skewers at Majiyong. The distinction between the two types is the size of the lamb cubes. I personally prefer smaller cubes, as the fat and exterior tend to crisp up more.


Their skewers aren't comparable to restaurants specializing in Chinese skewers(or chuan), but its still worth a try. The flavoring and spicing of the lamb is quite punchy, and includes cumin, Sichuan peppercorns, and a hefty amount of salt.

The main event at Majiyong is undoubtedly the noodles. They serve both hot and cold noodles. A classic option is the beef noodle, with a beef bone broth, beef slices, coriander, and spring onion toppings. Their are three levels of spice to choose from: spicy, mild, and plain. And noodles sizes are also arranged from thick to thin to give full customizability to customers.



Thin noodles have the advantage of being able to absorb the broth. However, thick noodles preserves the al-dente texture that differentiates a sub-par noodle to exceptional noodles. I wouldn't suggest going with what they have recommended on their menu. Go with one size thicker noodles.


Why is Majiyong so popular?


Anytime you try to eat at the better locations of Majiyong, there's always a queue. The popularity of Majiyong comes from its ability to attract customers looking for a quick cheap meal, and people looking for delicious, high-quality noodle soups.
